Every Friday morning we drive to Heritage Era, a small dairy farm in Owego to get fresh milk , transport it back to our creamery, and begin the cheese-making process. We believe the freshness of the milk and it’s high-quality is one factor that gives our cheese its great taste. The cows diet includes a mixture of corn silage, dry grass, baleage, oats, cornmeal, soybean meal, canola meal, mineral supplements, and salt. When the grass is growing between May and September the cows consume fresh green pasture. Preventative care, cleanliness, a low-stress environment, and love for their animals contribute to the health and vitality of their herd. Their milk is rBGH free.
